Day 4 - A healthy recipe

I decided to post a staple recipe for anyone who is following Weight Watchers. This recipe doesn’t sound like much – but it is very flavorful and filling. I have been known to change up the veggies for whatever may be in season and/or add some boneless chicken breast if I feel like it. Obviously the chicken would increase the PointsPlus™ value. But this soup is super yummy and one of the only reasons I don’t mind chilly weather!



Crock Pot Zero Point Soup

Ingredients

1 carton + 1 small can Swanson 99% ff/low sodium chicken broth
1 carton Swanson low sodium vegetable broth

1 lg sweet onion, chopped
1 med. zuccini, chopped
1 med. yellow squash, chopped
2 carrots, scrubbed and chopped
1 10oz. spinach, squeezed dry
1/2 head cabbage, chopped
8 oz. frozen green beans
1 small can crushed tomatoes
3 cloves garlic, chopped
2 tsp. dry basil
2 tsp. dry oregano
salt to taste
pepper to taste
cayenne pepper for spice lovers!

Instructions
Easy! Combine all ingredients in crock pot, cook on high 4-5 hours. No points and is so healthy and hardy.
Brian LOVES this soup!!!

Special Notes
You could make crusty bread to go with the soup with no guilt because the soup is no points!
